For this cake, I used three 6" cake layers. I made my Favorite Vanilla Cake recipe, changing the flavors around to make to make it a lemon flavored cake. I whipped up my recipe for American Buttercream with the lemon flavor variation. I reserved a little icing and colored it pink, and a little more and colored it yellow. I forwent the crumb coat because my layers were nice and cold. I always make cake layers the day before I decorate them and freeze them; I find it preserves the texture and makes them easier to work with (they crumb less and they are easier to handle). I used a Russian piping tip to pipe the buttercream roses onto a sheet of parchment, which I froze so I could then put them easily onto the cake.
